Ingredients
3½ cups wheat berries (sprouted)
2 tomatoes (chopped)
1 cucumber
2 cups fresh basil leaves (torn roughly)
2 small collard leaves (sliced very thin)
1 cup raw pine nuts
1 cup kalamata olives (chopped)
2 tablespoons tahini
¼ cup fresh lemon juice
½ tablespoon sea salt
Freshly ground pepper
Recipe Directions
1. In a large mixing bowl, combine wheat berries, tomatoes, cucumber, basil, collards, nuts and olives. Set aside.
2. In a smaller bowl, combine dressing ingredients: tahini, lemon juice, salt and pepper.
3. When the tahini is well combined, pour over veggies and mix well.

The dressing is creamy and the olives are meaty.
A totally satisfying meal that even my non-vegan husband liked!

How many unsprouted wheat berries should equal 3.5 cups after sprouting do you think?

I think you could do any hearty grain that works for you. Spelt or kamut, barley or rye, whatever you like! Tahini really makes the greek flavor but to avoid sesame seeds you could try...almond butter?

@ Karuna – I let them sprout until they have little tails, takes 2-3 days :-)

Supposedly there exist truly raw sproutable rice but I never was able to find it back the only package of wild rice that actually sprouted for me. But if you find it, you might be able to substitute it with real rice.

allergies to wheat. Kamut may work. It is an ancient wheat. Therefore I eat it. Buckwheat could work, also try and get Chana Dal Garbanzos. They are smaller than the regular garbanzos.
Recipe sounds great.

Sounds scrumptious! Any suggestions for what I could substitute for the wheatberries and sesame? (allergies to wheat and sesame).
